Based in Massachusetts, Untill (previously known as Evergreens Farms) operates a hydroponic vertical farming system that produces greens, such as arugula, kale, watercress, spinach, bok choy, cabbage, mustard, and a mix of brassicas. The company claims its technology can control almost every environmental factor (e.g. humidity, temperature, lighting, etc.) and can grow crops faster at 200-300x the yield per square foot of a normal field farm. The company’s main goal is to grow crops close to customers to ensure freshness as well as to reduce transportation costs.
As of February 2020, the company operates three vertical farms of different sizes in Massachusetts, with a total capacity of around 100,000 lbs of fresh-produce every year. During the same time, the company reported its plan to build 2-3 more farms of different scales in the New England region and sell the produce to nearby communities.
