Founded in 2020, Resauce is a Danish startup that ferments excess fruits and vegetables to upcycle them into sauces, syrups, and jams with an extended shelf life of 3-5 years vs more common expirations for similar products of 1-2 years. As of August 2021, the company’s market-ready product lineup includes tomato sauce, bean paste, and chili sauce. Resauce initially planned to sell to restaurants, canteens, and supermarkets. However, due to the pandemic the company’s commercialization plans were halted. In June 2021, the company reported that it is taking a different approach, and expects to operate a B2B business model with food companies and farmers using Resauce to upcycle their food waste into their own fermentation products.
