Crespel & Deiters Group, a leading European manufacturer of wheat starches and proteins. The group through its subsidiary Loryma produces wheat-based food ingredients including wheat proteins and starches for the production of plant-based meat and seafood. Loryma distributes a range of textured vegetable proteins based on wheat under its “Lory Tex” brand that are in powdered, chunks, flakes, strips, granules and fibre form, that are promoted as ingredients to produce alternatives to beef, chicken, pork and fish products. Loryma also launched two clean label binding systems under its “Lory Bind’ brand in July 2021; one for finely structured sausage-like products the other based on textured vegetable proteins. The company caters to B2B channels and mainly focuses on plant-based meat producers and foodservices. In 2020 Loryma partnered with Viscofan, a manufacturer of meat casings based in Spain, to develop a plant-based bratwurst using Lory Tex Granules and Lory Bind; the product is reported to have similar taste and texture to a meat-based bratwurst.
