Resugar is a food tech company founded in 2020 by Niv Ben-Ami and Ron Livny in Israel. The company develops a sugar substitute that contains 70% less sugar while maintaining the same taste and functionality as regular sugar. This product combines 30% sucrose with dietary fibers like chicory and natural flavors that enhance the sweetness of sugar by nearly 3x. Its unique formulation acts as a one-to-one replacement for conventional sugar in various food products including ice cream, baked goods, breakfast cereals, and confectionery items without requiring manufacturers to alter their existing formulas.
While it costs 2x–3x more than conventional sugar, it remains cheaper than other leading sugar substitutes. In blind taste tests, 58% of consumers preferred ice cream made with Resugar over a leading brand's vanilla ice cream. The company operates a production facility in Chicago to manufacture the product in large quantities. Additionally, Resugar was developing a naturally occurring disaccharide that tastes like sugar but cannot be metabolized by the human body.
Key customers and partnerships
Resugar’s proprietary formulation was developed in partnership with The Technion - Israel Institute of Technology using an enzymatic process to transform raw materials into a sugar-like compound.
Resugar's sugar substitute is used in Nestlé-Froneri's low-calorie ice cream bars in Israel. The company also partnered with a leading Israeli food manufacturer to incorporate the product into the latter’s dairy product line. The company is engaged in commercial discussions with several multinational food and beverage companies regarding licensing its technology.
