Typcal is a Brazilian food tech startup that leverages biomass fermentation to develop mycoprotein ingredients for food applications. Its mycoprotein is characterized by its high protein and fiber content, low fat and calorie profile, and neutral flavor, making it suitable for vegan, vegetarian, and hybrid food products. Further, it uses a fungus strain with a history of human consumption in Brazil, which is expected to simplify the regulatory approval process.
Typcal's unique production process claims to develop products in just 24 hours, which is significantly faster than the industry standard of 48–72 hours. This process reportedly offers 7,000x higher productivity and uses 99% less water than traditional meat production. Additionally, the company uses agro-industrial byproducts in its production, contributing to waste reduction and minimizing environmental impact.
As of August 2024, the company was operating at a pilot scale, producing up to 100 kg of fresh mycoproteins per month and planned to introduce its first mycelium-based products to the market by 2025.
