Fermtech is an Oxford-based company that produces protein using solid-state fermentation technology. The company's process uses the fungus Aspergillus oryzae, commonly known as koji, and spent grains from local breweries as feedstock to create non-GMO protein. Fermtech’s flagship product, Nutriferm, offers essential amino acids to improve the nutritional profile and taste-enhancing functions that allow for the reduction of salt or cocoa in foods. It can be used for various applications, including baked goods, snacks, and plant-based meat and cheese alternatives.
Fermtech's fermentation process is powered entirely by its own energy and produces no agricultural footprint, resulting in what the company claims to be a zero-carbon protein. According to the company, its process allows for the production of protein that is cost-competitive with plant-based options while reducing environmental impact through the upcycling of waste streams.
As of 2024, the company was developing its fermentation technology and scaling up production to support the planned launch of its first protein ingredient product, Nutriferm.
Key customers and partnerships
Fermtech has conducted trials with major food companies, including Associated British Foods, Upfield, and Saputo (Cathedral City). In July 2023, Fermtech partnered with the Oxford-based Tap Social Movement brewery, using spent grains from the brewery’s production as a feedstock for its fermentation process.
