MATR Foods is a Danish startup producing sustainable plant-based meat alternatives through fungal fermentation technology. Its products, made from just five organic and upcycled ingredients—oats, split peas, lupin, beetroot, and potatoes—are described as a "new generation" of plant-based foods. The natural fungi spores added to these ingredients ferment them, imparting an umami flavor and firm, meat-like texture to the resulting products.
MATR's product range includes plant-based patties and mince, which claims to be free from additives, low in calories, and high in fiber. These are available across several Danish restaurants and also at the online supermarket Nemlig.com.
Key customers and partnerships
MATR's plant-based meat alternatives had already been launched at Sticks N'Sushi in the UK, Denmark, and Germany as part of a menu item called the MATR Chili yakitori stick, as of September 2023. Additionally, the startup also partnered with Danish burger chain Gasoline Grill to offer a meat-free patty that could be ordered as part of any burger.
