the moonbeam co. is a Singapore-based sustainable food tech startup that focuses on upcycling food waste, particularly the protein and fiber-rich brewer's spent grains (BSGs) that would otherwise be discarded and incinerated. The startup was founded in 2021 by three undergraduate students and an alumnus of the National University of Singapore (NUS) as well as a graduate student from the Nanyang Technological University (NTU).
The company developed a proprietary process to alter the texture of BSGs, making them crispy and similar to oats, which allows for their use as a substitute in food products. The company's primary product is granola made from upcycled BSGs. In addition to BSGs, it has also explored the application of rice beer as a technique to use unserved cooked rice, which is a significant form of food waste in Singapore. The company’s product is available for sale in Singapore through the ecommerce platform Shopee.
