UK-based Rubies in the Rubble produces a range of products from mayos to ketchups using food waste. These products are made using fresh fruit and vegetables sourced from farms. The mayo uses a special ingredient, aquafaba, which is a plant-based alternative to eggs that is a byproduct of chickpeas.
As of October 2024, Rubies in the Rubble had saved 992,888 kg of fruits and vegetables and 832,185 kg of CO2 equivalent emissions. Rubies in the Rubble was expanding across the UK with plans to reach global markets including the US and the rest of Europe. The company’s products are used by major retailers and restaurants, including Waitrose, Tesco, and The Pig.
Key customers and partnerships
Rubies in the Rubble has maintained a close collaboration with Virgin Trains since May 2019 to collect surplus apples from trains and transform them into chutney which it then re-supplies back to trains. In July 2021, Rubies in the Rubble partnered with Forest Green Rovers Football Club to supply ketchup and relish condiments and reduce food waste. This partnership was extended in October 2023 and August 2024, with the company serving as the club’s official condiment partner.
In December 2022, Rubies in the Rubble teamed up with the UK-based creative agency Hell Yeah! to redesign its ketchup bottle.
