Pazzi is a French startup that developed an autonomous pizza-making robot system for restaurants. Founded in 2013, the company aimed to revolutionize the fast-food industry by creating fully automated pizzerias. Pazzi's robotic system could prepare customized pizzas in just 45 seconds, with a capacity to produce up to 80 pizzas per hour. The robots handled every aspect of pizza-making, from flattening the dough to applying sauce and toppings, baking, and boxing the finished product. Pazzi's technology incorporated cloud-connected software, machine learning, and multiple sensors to monitor quality and manage operations. The company opened its first fully autonomous restaurant in Paris in 2019, followed by a second location. Pazzi's concept attracted significant investment, with the company raising over EUR 12 million in funding. However, despite its innovative approach, Pazzi faced challenges in scaling its business. In October 2022, the company ceased operations.

Pazzi collaborated with chef Thierry Graffagnino, a three-time world champion of pizza, to develop its recipes and pizza-making process. The company also partnered with Pinto Brasil, a Portuguese industrial firm, to produce and assemble robotic equipment for the European market. Pazzi's restaurants catered to customers in Paris.
