California-based Michroma is a bio-based fungi ingredient company that utilizes advanced biotechnology and fermentation techniques to produce natural food colors. The company employs CRISPR gene-editing technology to develop non-GMO colors; it also generates biomass as a by-product. As of May 2023, Michroma’s flagship product is Red+, and it is reportedly working on developing blue and white variants.
