Shiru, a California-based producer that leverages bio-fermentation and machine learning (ML) to develop plant-based ingredients, announced that it had teamed up with Belgium-based innovator in bakery ingredients Puratos to evaluate and develop prototypes of egg-replacers for baked goods.
The partnership will leverage Puratos’ expertise in the field of bakery ingredients, along with Shiru’s ML platform Flourish to evaluate a range of egg proteins for their functionality and performance in baked goods.
Once identified, Shiru claims it will be able to produce a functional animal-free egg alternative at scale and expedite product launch timelines.
