Le Papondu, a French startup developing vegan egg alternatives, has launched its first product Papondu Beaten after multiple years of R&D.
According to the company, the new product, made using fava bean flour, oil, water, salt, carrot, and methylcellulose, can be used in an array of dishes including omelets, egg muffins, and fresh pasta.
The company also stated that it is working on a whole-egg alternative featuring a biodegradable shell.
Analyst QuickTake: This is the second instance within a month in which a plant-based egg developer has mentioned the development of a whole-egg alternative to feature an outer shell. In September 2022 , Neggst raised EUR 5 million (~USD 5 million) in a seed funding round for the development of its flagship whole-egg product to be encased in an biodegradable shell. While almost all alternative egg products so far have been in the form of liquid or powder, this new development shows that companies are striving for an alternative egg product, which is not only similar in functionality but in appearance as well.
