Nepra Foods, a Canadian plant-based food and ingredient company, has announced signing its first commercial partnership with a national bread producer to use the company’s proprietary allergen-free vegan egg substitute.
The gluten-free bakery will use Nepra’s egg replacement initially in white and multigrain bread, with plans to expand into other gluten-free offerings. Initial distribution will be handled through 2600 Kroger, Publix, and Meijer outlets nationwide.
The company claims that by using the egg replacement product, the bakery can produce bread free from all allergens, which will have an ambient shelf life of 28 days. Further, the egg replacement is claimed to be more stable in terms of price, as compared to the price volatility of traditional eggs.

In December 2022 alone, the average price of eggs shot up by ~60% in the US. On the contrary, egg-replacement powders, such as Nepra’s product, are impervious to many of the factors that influence the price of eggs; hence, the producers can maintain stable production costs, which in turn translates to stable retail prices that are beneficial for bakeries and consumers alike.
