Climax Foods, a California-based producer of plant-based cheese with the use of machine learning, has launched its first product offering: Climax Blue plant-based cheese.
Climax Blue, a plant-based alternative to blue cheese, is visually and texturally similar to the traditional counterpart which features blue-green veining. Further, this non-GMO product is claimed to contain five grams of protein per serving while being free from fillers, gums, and artificial colors or preservatives.
The product will be available for sampling at Expo West in Anaheim, alongside limited quantities of soon-to-be-launched brie, feta, and chevre-style cheese alternatives. Climax Blue is slated for its food service rollout in April 2023, with a retail launch expected to come later this year.
