Plantible Foods, a plant-based ingredient developer, has launched its first commercial product, Rubi Whisk, a plant-based egg replacement ingredient.
Rubi Whisk is a versatile egg alternative that can be used by commercial producers of baked goods, gluten-free products, and pasta, among others. It claims to offer benefits such as fat-binding and oil-holding capacity, high-foaming capacity and stability, high solubility, moisture retention, and emulsification capabilities.
Plantible uses proprietary technology to extract RuBisCO from the Lemna plant (also known as duckweed) and converts it into Rubi Protein, a neutral-tasting compound that contains all essential amino acids. The compound mimics the functionality of animal proteins. Rubi Protein is the base for all Plantible products, including Rubi Whisk.
