Chilean plant-based food and dairy startup NotCo has launched NotMilk Barista, a shelf-stable oat-based milk, into US foodservice.
NotMilk Barista was designed for foodservice using NotCo's AI technology and input from professional baristas. According to the company, it offers comparable functionality to dairy milk and can create foam for various coffee beverages, even in high-acidity coffees and different steaming settings.
Analyst QuickTake: With the launch of NotMilk Barista, the company has achieved its target of expanding its shelf-stable range into the foodservice sector. NotCo exited the refrigerated milk segment in the US earlier this year to focus on the growing shelf-stable category and sells the shelf-stable range in over 3,500 retail outlets.
