Umiami, a French plant-based brand, has formed a strategic partnership with Swiss distribution specialist FFF Fresh & Frozen Food to introduce its vegan chicken fillet in 165 Coop stores across Switzerland.
Umiami employs innovative umisation technology to create its vegan chicken fillets using less than 10 ingredients and zero texturing agents or methylcellulose, resulting in a product that claims to closely resemble the taste, texture, and appearance of real chicken.
AnalystQuickTake: Umiami’s umisation technology enables the development of plant-based whole-cuts without 3D printing. According to the company, this technology can create products up to three inches thick, with meat-like fibers and fewer flavor losses than high moisture extrusion (HME).
