Cultivated Biosciences, a Swiss Food Tech company, has unveiled a dairy-free coffee creamer prototype that uses yeast-based fermented fat at a MISTA event in San Francisco.
The product is developed through biomass fermentation and uses an oleaginous yeast strain that generates fat during growth. This fat is combined with plant protein, sugar, and natural flavorings to produce a creamy, white, and stable coffee additive.
According to the company, the yeast-based creamer will offer a cleaner taste and superior texture compared to other non-dairy alternatives, which can withstand the acidity of coffee without curdling, a typical issue with plant-based milk products.
