MycoTechnology, a fermentation specialist, has partnered with Macalat, a US-based chocolate brand, to create an organic, sugar-free, vegan dark chocolate bar using ClearIQ, a flavor modifier derived from mushroom mycelium.
According to the company, using ClearIQ in Macalat’s new chocolate bar eliminates the need for sugar and other artificial sweeteners and counteracts the bitterness and other off-notes often associated with dark chocolate.
