Revyve, a Dutch company producing animal-free food from natural microorganisms, announced it will launch its clean-label egg replacer designed to improve the texture of plant-based burgers at the IFT First 2024 Convention in July 2024 in Chicago. The egg replacer is claimed to emulate the characteristics of egg whites, including binding, emulsification, and heat-set gelling.
Revyve's egg replacer is claimed to be “super clean” free from stealth starches, emulsifiers, and E-numbers, which manufacturers can use to create clean-label plant-based products. The patented technology used produces effective proteins and fibers from circularly sourced microbial biomass, which are then converted into high-performance texturizing ingredients for plant-based products,
Revyve is setting up a new factory in the Netherlands with an estimated production capacity of ~300 tons commensurate with ~80,000 egg-laying hens, enough for ~75 million burgers. The factory is expected to be available by Q3 2024.
