Nourish Ingredients, an Australian startup developing fermentation-derived fats, has partnered with dairy giant Fonterra to accelerate the development of dairy products containing fats produced via fermentation.
The collaboration aims to explore the potential of Nourish's Creamilux lipid, produced by a genetically engineered microbe, as a key ingredient to mimic the taste and texture of dairy fat in products like cheese, cream, and butter. It will also explore opportunities for Nourish's fats to enhance non-dairy categories like bakery that traditionally rely on dairy fats.
