Nourish Ingredients collaborates with Fonterra on fermentation-derived dairy fats

  • Nourish Ingredients, an Australian startup developing fermentation-derived fats, has partnered with dairy giant Fonterra to accelerate the development of dairy products containing fats produced via fermentation.

  • The collaboration aims to explore the potential of Nourish's Creamilux lipid, produced by a genetically engineered microbe, as a key ingredient to mimic the taste and texture of dairy fat in products like cheese, cream, and butter. It will also explore opportunities for Nourish's fats to enhance non-dairy categories like bakery that traditionally rely on dairy fats.
