Plonts, a California-based dairy-free cheese producer, has emerged from stealth with its debut product, a plant-based aged cheddar cheese.
The company uses fermentation and a blend of microbes, including mold, bacteria, and yeast, similar to traditional cheese-making methods to transform soy milk into cheese. This cheese claims to offer the distinctive "stink" associated with dairy-based mature cheddar cheese, along with its flavor, stretch, and melting properties.
This product's development was backed by USD 12 million in seed funding in 2022. Lowercarbon Capital led this round, which included participation from Accelr8, Litani Ventures, and others.
