Founded in 2020, New School Foods develops plant-based seafood, focusing on whole-cut salmon alternatives. According to the company, its products resemble real salmon in terms of appearance, texture, taste, and cookability. In February 2023 , the company unveiled its new scalable and proprietary platform, which according to the company delivers products with plant-based aligned muscle fibers (using whole-cut scaffolding), connective tissues, and fats. New School Foods also developed a chef-only pilot program before its product launch, targeting restaurants across the US in 2023.
