Founded in 2020, Bosque Foods (previously known as Kinoko Labs), is a biotech startup developing whole-cut meat alternatives grown naturally from mycelium. The startup upcycles low-value side streams from the agri-food industry into mycelium to create meat alternatives.
In February 2022, it unveiled its mycelium-based pork and chicken filets, produced using a novel solid-state fermentation process. Samplings of Bosque Foods’ pork fillets and chicken filets were given to alternative protein and food tech investors during a private tasting at the ProVeg Incubator in Berlin, through which the company demonstrated the potential of its mycelium-based prototypes as well as the proof of concept of its proprietary solid-state fermentation technology.
Funding and financials
In its latest funding round in May 2022 , the company raised USD 3 million in a follow-up seed funding round, with the participation of FoodLabs, Happiness Capital, SOSV, and others. These funds are expected to be used for further product development and accelerating commercialization.
