Koralo, founded in 2021, is a German startup that develops fermentation-based seafood alternatives. The company’s patent-pending co-fermentation technology uses mycelium and microalgae to create its flagship product, New F!sh. This product claims to contain complete proteins, omega 3, vitamins B2 and B12, and prebiotic fiber.
According to the company, its fermentation process emits 96% less CO2 than regular fish and uses 99% less blue water and 98% less land than soy-based protein alternatives. In March 2024, the company scaled its co-fermentation process to 5,000 l with local OEM partners in South Korea. Koralo products are available at foodservice venues in South Korea and the company plans to expand distribution further, as well as license its technology to food manufacturers.
