The Mediterranean Food Lab (MFL) is an Israeli food tech company that specializes in the development of natural, plant-based flavor solutions for the alternative protein industry. The company has developed an innovative flavor crafting platform that combines culinary expertise, advanced microbial science, and AI to offer sustainable, nutritious, and clean-label products free from industrial materials, flavorings, or GMOs.
Its unique approach leverages solid-state fermentation to transform ingredients like grains, legumes, vegetables, and upcycled farm waste to create flavored amino acids, natural sugars, and other beneficial compounds.
Funding and financials
In its latest funding round in January 2024 , the company raised USD 17 million in Series A funding led by Gullspång Re:food, with participation from PeakBridge, Arancia International, FoodBridge, and other investors. The funds are earmarked for increasing industrial production and establishing a sales team to promote and sell its fermented flavors.
In addition, MFL has also received a EUR 100,000 (~USD 109,000) award from the European Institute of Innovation and Technology Food Accelerator Network program and a grant from the Good Food Institute to research traditional Southeast Asian foods.
