Vacka is a Spanish FoodTech startup developing plant-based dairy-free cheese products. Instead of using more popular options such as soy, coconut, and cashews, the company uses fermented melon seeds (replacing fermented almond milk), in combination with olive oil, to produce its range of cheese. In January 2023, the company had filed a patent application covering its design, ingredients, and manufacturing process. As of March 2024, the company has four plant based cheese ranges: Meltables, Creamy, Pizzas and Matured.
According to the company, its cheese products are 73% lower in saturated fats. They also use 99% less water, 98% less land, and emit 91% less CO2 during the production process. Vacka cheese can be purchased via its online store, from its store at Nest City Lab, and from several Spanish retail outlets. The company was planning on expanding into France after winning Carrefour’s plant-based competition and was also in the process of expanding into Germany.
