Founded in 2020, Fabumin is an Israeli startup specializing in producing egg alternatives. Fabumin’s goal is to produce eco-friendly animal-free egg substitutes without compromising on features and textures available in their animal counterparts.
In July 2024, Fabumin developed its new multipurpose egg replacer, targeting the food industry, from upcycled legume water waste (aquafaba). The egg replacer uses its patented technology, which distills the aquafaba into a denser form and dries it into a powder (20%) while purifying and reusing the majority of the cooking water (80%). Fabumin also plans to create plant-based eggshells mimicking chicken eggs.
Fabumin claims its technology recycles large amounts of water and reduces wastage compared with chicken egg production. The company expects to produce 180 million egg equivalents of its egg alternative by 2025. Further, it plans to reduce GHG emissions by 235,000 tons, saving ~1,500 chickens and ~30 million liters of water.
In April 2022, Fabumin was selected as the Israeli candidate for ProVeg Incubator’s accelerator program. The accelerator program involved ProVeg Incubator collaboratively working with seven startup companies to support them in building their businesses, in line with ProVeg’s aim of reducing the consumption of animals by 50% by 2040.
Key customers and partnerships
Since its inception in 2020, Fabumin worked with New York-based International Flavors & Fragrances (IFF) as part of an innovation lab. This collaboration resulted in the registration of a patent for its product and technology.
