Savor is a California-based food tech company that has developed a process to create real fat molecules, identical to those found in animal products like milk, cheese, beef, and vegetable oils, without involving animals or plants. Its process involves taking CO2 from the air and hydrogen from water, heating them, and oxidizing them to trigger the separation of fatty acids and the subsequent formulation of fat. According to the company, this process does not release any greenhouse gasses and uses less than a thousandth of the water required for traditional agriculture. Moreover, it can be installed anywhere, regardless of climatic or geopolitical challenges.
Savor's fat production technology aims to replicate the richness, juiciness, meltability, unique mouthfeel, and overall flavor of animal fats. The company aims to drive down the price of its products to make them affordable. In July 2024, Savor developed a butter prototype using its innovative technology that claims to offer similar taste and functional properties as dairy butter. Additionally, the company aims to develop milk, ice cream, cheese, meat, and tropical oils using the same technology.
