Dutch Structuring Technologies

Dutch Structuring Technologies BV (DST), founded in 2021, is a Dutch company producing plant-based meat and fish alternatives. DST was formed with the primary objectives of developing the novel Continuous High Shear (CHS) technology and producing plant-based meat alternatives.

DST first began developments for CHS technology in 2021 and finalized it in June 2024. The CHS uses lower processing temperatures than extrusion and combines plant-based protein with oil and water, eliminating the need for additives while reducing the post-processing steps. According to the company, this technology can create more meat-like fibrous textures for meat alternatives compared with other methods and allows products to be competitively priced with conventional meat products.

Key partnerships and customers

In early 2023, DST collaborated with Sobatech, a Dutch company manufacturing Continuous Mixing Systems, and Fuji Europe Africa BV. With the partners, DST secured a EUR 0.4 million (~USD 0.43 million) subsidy from the Dutch Government, under its OPZuid program. The main focus of this partnership was upscaling DST’s CHS technology to produce 1000 kg/hour from its previous capacity of 200 kg/hour. The subsidy was also reported to be used for enhancements of plant-based product textures and flavors.

Additionally, the company collaborates with B2B customers to create bespoke products.
