Small Food Inc., a Halifax-based microbial ingredient company, is aiming for the alternative seafood market with a new marine-based whole food ingredient that's high in protein with an amino acid profile similar to beef. It also contains significant amounts of the coveted long-chain omega-3 fatty acids EPA and DHA.
According to the company, similar textures to its counterpart can be created by combining the novel ingredient with texturized soy or pea protein or by combining it with hydrocolloids. Furthermore, the component can be used to improve protein and omega-3 levels in seafood alternatives while adding a subtle seafood flavor.
