MyForest Foods (formerly Atlast Foods), a New York-based startup producing plant-based meats using mycelium, announced two new retail partnerships (Berkshire Food Co-op and Cornucopia Natural Wellness Market) as it expands its flagship product MyBacon’s distribution into the state of Massachusetts.
This news follows the opening up of its new vertical AirMycelium farm known as Swersy Silos, allowing the company to drastically scale up its production. The vertical farm is a part of new infrastructure spanning 120,000 square feet, which includes a production facility located in Saratoga Springs, NY, slated to begin operations in the fall of 2022.
Swersy Silos is claimed to have the production capacity of up to nearly 3 million pounds of mycelium annually and with the combination of the production facility operating at full capacity, the company expects to serve more than 1 million consumers by 2024.
