Food Evolution, an Italian vegan meat brand of JOY Srl, announced the development of its novel plant-based meat texture for alternative chicken which they claim can produce cheap products which are high in nutritional value.
The company uses high moisture wet extrusion technology where the protein cell is stretched mechanically to create a meat analog with a similar texture to that of real chicken. Sunflower oil and natural aromas are later added to create an alternative chicken product that is high in protein and low in carbohydrates and fats, according to the company.
Food Evolution is the vegan meat brand of Italian startup JOY Srl founded by the Musacchio family. Its current portfolio consists of plant-based burgers (both beef and chicken), bacon, chicken pieces, and beef pieces all made using a soy protein base combined with other ingredients. Currently the products are only available in Italy through retailers and online. However, following an investment round in 2021 the company stated plans to expand distribution across Europe.
