3D Bio-Tissues (3DBT)—cultivated meat subsidiary of British company, Bio-Sustainable Future (BSF) Enterprise—announced it has produced what it claims is the world’s first 100% cultivated pork steak filet.
Made using the company’s patented serum-free media, City Mix, the filet was made solely with pig cells without using of any plant-based scaffolds, blends, or fillers that are generally used to give cultivated meat structure.
The filet—measuring 9 cm in width, 4 cm in length, and 1 cm in height—performed well in tests, according to the company. In its raw state, the meat had displayed fibers and elasticity similar to that of animal meat; when it was cooked, the filet had seared well, with signs of charring and aromas similar to traditional pork.
With the success of this prototype, the company expects to develop a full-scale product that they plan to showcase at a public event in London.
Analyst QuickTaste: One of the main methods cultivated by meat producers to curb cost is by using serum-free media; the next method stems from the elimination of scaffolds, binders, and fillers. As 3DBT achieves success on both fronts, and with the recent, gradual easing of regulations, we may see an accelerated path toward commercialization for the company.
