Crush Dynamics, a Canadian company that turns food waste into healthy food ingredients, has created an ingredient that allows for significant sugar reduction in chocolate applications. This plant-based solution provides a smooth texture and well-rounded sweetness while reducing the sugar by 30–50%.
The ingredient, developed using a patented fermentation process on grape derivatives, allows food manufacturers to reduce sugar and sodium while improving flavor and increasing shelf-life in various food and beverage applications.
Crush Dynamics will attend the Future Food-Tech Summit in San Francisco with Purdys Chocolatier, a leading chocolate producer, on March 16–17. Furthermore, Purdys and Crush Dynamics will continue working on new confectionery projects.
