Mush Foods Develops Mycelium Protein Ingredient to Reduce Animal Protein in Meat Products

Product updates

  • Mush Foods has developed a mycelium protein ingredient called 50CUT to reduce animal protein content in meat products by 50% which is tailored for hybrid meat products to satisfy flexitarians and carnivores with a unique sensation while easing the impact of global meat consumption.

  • 50CUT is composed of three edible mushroom mycelium species that perfectly pair with the particular taste, formability, texture, aroma, and even color of beef, grown above the ground in indoor farms by recreating the underground growth conditions without light and uses minimal land, energy, and water, independent of season or climate.

  • Founded in 2021, Mush Foods is a food technology company from Israel that uses mushroom mycelium to produce animal-free protein as a key ingredient for the food and beverage industry.
