Boston-based food technology company Motiff FoodWorks announced its second food tech ingredient, APPETEX, as available for large-scale commercial distribution. The ingredient provides the springy, juicy chew to be typically associated with animal meats.
APPETEX is developed in partnership with Rhizome Network (an independent research organization) to replicate the texture of animal connective tissue using a combination of plant proteins and plant-based carbohydrates. This is Motif’s second major ingredient following HEMAMI, its debut ingredient that imitates the meaty flavor and aroma of traditional meats.
The company plans to launch a range of finished products within the year through an online direct-to-consumer sale, slated for April 2023, where customers can purchase a four-pack of Motif BeefWorks Plant-Based Burger Patties, made using APPETEX and HEMAMI.
