Mycorena, a Swedish biotechnology company specializing in mycoprotein, has partnered with RIP (Rich In Plants) Foods, a Spanish plant-based meat producer, to develop mycelium-based street food targeting mainstream customers.
The partnership aims to create innovative and flavorful plant-based street food options using mycoprotein. Its first joint creation is a vegan kofta based on Middle Eastern flavors, slated for launch in the Netherlands at the Karma Kebab plant-based restaurant.
