Cocuus partners with Foody’s to develop 3D-printed plant-based tripe

  • Cocuus, a Spanish food tech startup, has partnered with Foody's, a Spanish plant-based meat company, to develop what it claims to be the world's first 3D bioprinted plant-based tripe. Tripe, the edible stomach lining of pigs and cows, is the main ingredient of the popular Spanish dish, Callos.

  • A specially formulated hydrogel that mimics the taste and look of tripe was used in the bioprinting process. The 3D-bioprinted tripe was developed to showcase the technology potential and is not for commercialization.

  • The partnership aims to industrialize and market Cocuus's 3D-bioprinted alternative meat products under the Foody's & Cocuus brand. Its first product is plant-based bacon, with other products such as shrimp, salmon, octopus, foie gras, and tuna planned for commercialization.

  • AnalystQuickTake: Cocuus’s 3D-bioprinting platform, Mimethica, utilizes proprietary ingredients (bio-inks) to create novel food items. According to the company, it analyzes the morphological structure of various food items and builds mathematical models based on the data, which allows scalable reconstruction.
