Esencia Foods hosts tasting event for mycelium-based seafood in Europe

  • Esencia Foods, a German biotech specializing in mycelium-based meat alternatives, showcased its mycelium-derived whitefish alternatives to Seabass and Cod at the Anuga gastronomic fair held in Cologne, Germany.

  • Esencia's mycelium-derived whitefish is made using a proprietary solid-state fermentation process and claims to be high in protein, fiber, and omega-3.

  • Esencia Foods, founded in 2022, develops clean-label seafood alternatives using a strain of an edible fungus and its proprietary solid-state fermentation process. The company claims to be the first European developer of whole-cut fish and seafood alternatives.
