Crush Dynamics, a Canadian startup that upcycles food waste, has secured a CAD 1.98 million (~USD 1.46 million) grant from the Canadian Food Innovation Network (CFIN) to develop a new ingredient for food products. The project is valued at just over CAD 4 million (~USD 2.94 million) and is partially subsidized by CFIN's Food Innovation Challenge Program.
The funding will be utilized to amplify Crush Dynamics’ production process at scale of the ingredient that is made by fermenting upcycled wine derivatives and agricultural waste. The company claims its fermentation method can help avert up to 50 million tons of CO2 emissions yearly.
