Arbiom unveils new fermented yeast protein

  • Arbiom, a French-American producer of sustainable proteins, has launched Yusto yeast protein, a fermentation-derived alternative ingredient. It has been approved for global use and can be used in various food products, including meat and dairy alternatives, snacks, and sauces.

  • According to the company, Yusto yeast protein contains B vitamins, high fiber content, and essential amino acids. Furthermore, it provides an umami flavor, which can mask the bitterness in plant-based proteins and allows for reduced salt content.

  • Arbiom, founded in 2017, produces sustainable protein ingredients through fermentation. The company claims its fermentation process is versatile and can use a variety of feedstocks ranging from traditional agricultural sources to by-products and wood residues.
