New Culture, a company specializing in animal-free cheese, has received self-affirmed Generally Recognized as Safe (GRAS) certification for its precision fermentation-derived casein, making it the first company to do so.
New Culture's unique casein is created through precision fermentation, allowing the company to produce animal-free mozzarella. The product's key features include its ability to mimic traditional cheese in terms of texture, taste, and melting ability, which is achieved by using casein proteins similar to those found in cow's milk. Additionally, the manufacturing process ensures the casein is industry-standard, reproducible, and safe for food application.
Analyst QuickTake: New Culture launched its animal-free casein in May 2023 and later scaled its animal-free casein production platform to produce cheese for 25,000 pizzas in a single run. Achieving GRAS status marks a significant step towards the company's commercialization efforts.
