New Culture, a plant-based dairy producer specializing in precision-fermented alternatives, has scaled its animal-free casein production platform to produce cheese for 25,000 pizzas in a single run.
Additionally, the company has achieved an 80% reduction in costs and targets price parity with conventional dairy within three years. It plans to expand its biomanufacturing capacity further to churn out enough cheese for 14 million pizzas annually.
New Culture will focus on obtaining self-affirmed GRAS status in 2023 and will begin commercial launch in 2024, starting with Nancy Silverton’s Pizzeria Mozza followed by a nationwide expansion.
