Pureture develops new cultivation technology for faster alternative casein production

Industry news

  • Pureture (formerly Armored Fresh Technologies), a biotech firm specializing in alternative dairy products, has improved its yeast protein cultivation process. This new development, for which a patent application is underway, has shortened the cultivation time by nearly 30%.

  • The advanced yeast cultivation method, used for producing plant-based casein protein, doesn’t require anti-foaming agents. Further, it claims to maintain essential functional features like thickening and emulsification. 

  • Analyst QuickTake: Casein is the most prevalent protein in cow’s milk and is essential for dairy taste and functionalities of cheese like melting and stretching. Dairy alternative producers are constantly looking for methods to make casein production cost-effective, efficient, and more sustainable. Climax Foods develops dairy casein using AI, while companies like NewMoo and Finally Foods use molecular farming to produce dairy proteins using plants.
