Clextral establishes texturizing technology for realistic whole-cut plant-based meat and fish

Product updates

  • Clextral, a French manufacturer of industrial pumps for the energy and chemical markets, has produced the patented Galaxy Texturation Technology (GTT), which claims to create realistic plant-based meat and fish whole cuts.

  • The GTT has a production capacity of 400 kg per hour. The machinery integrates shear cell fibrillation and continuous extrusion, resulting in protein material obtaining fibrous structures that approximate the texture of real meat or fish. Clextral claims the GTT can reduce production costs and improve product textures due to its changeable parameters. 

  • Analyst QuickTake: In 2023 , Clextral developed a patented High-Capacity Die (HCD) for high-moisture extrusion, creating up to 1,200 kg/h of HME product from the extrusion die. The two-product ribbons leave the die at a similar speed without a return pump, resulting in the ribbons producing the same stretching, hardness, and fibration characteristics, resulting in standardized product quality.
