MATR Foods, a Danish producer of fungi-based ingredients, has received an undisclosed investment from Novo Holdings, a Danish holding company specializing in life science investments.
MATR plans to use the funds to boost its production capacity to match supply with high demand. MATR's products are offered at Danish restaurants, including Gasoline Grill, Sticks'n'Sushi, and online supermarket Nemlig.com.
MATR utilizes innovative fungi food solutions (mycelium and traditional fermentation) to convert organic ingredients, including oats, split peas, lupin, beetroot, and potatoes, into patties and mince with umami flavor and firm texture. The mycelium as a binder provides a distinctive taste and makes its products devoid of additives and artificial flavorings.
