AQUA Cultured Foods receives GRAS status for fish-free seafood

  • AQUA Cultured Foods, a Chicago-based alternative protein company, has received Generally Recognized as Safe (GRAS) status for its fermentation-based fish-free seafood products. This self-affirmed GRAS status, following an independent expert panel review, allows the company to sell its products in the US.

  • The company's products include fish-free tuna and scallops, primarily made from cellulose grown through biomass fermentation. These products are designed to mimic the texture and appearance of traditional seafood closely, are vegan, allergen-free, and have a six-week shelf life.

  • AQUA Cultured Foods claims its products match the taste and texture of traditional seafood and will be offered at or below price parity compared to raw seafood wholesale. The company plans to sell directly to restaurants from its pilot facility in Chicago, aiming to address growing population needs and contribute to ocean conservation.

  • Analyst QuickTake: This development validates the safety of AQUA’s products and strategically aligns with its recent collaboration. In March 2024 , the company partnered with Ginkgo Bioworks to enhance AQUA's fermentation technology and product output. In addition, the companies aimed to develop innovative products for the broader food industry jointly.
