Melt&Marble, a developer of fat alternatives, has scaled its fat fermentation process to tens of thousands of liters, demonstrating the potential for commercial-scale production of its tailor-made fat products.
The company's scientific team maintained comparable strain and bioprocess performance in larger bioreactors, proving the robustness and scalability of its process for creating precision-fermented fats. This milestone enables broader application testing of Melt&Marble's fats in various industries, including alternative protein, confectionery, bakery, and personal care products.
Analyst QuickTake : Earlier this year, Melt&Marble expanded its R&D and production facilities with the opening of its new headquarters , which coincides with this latest milestone. Pending FDA approval, the company plans to commercially launch its bespoke fats by 2025.
